The Change is Starting

Chambourcin grapes changing from green to purple

Its always exciting when our grapes begin to make the change from growth to maturation.  Over the last week, veraison has begun as the plants begin to ripen their fruit.  The weather this Summer has been a bit cooler and damper than usual and our grapes are actually several weeks behind when they ripened last summer.  Since slow, cool maturation is believed to increase the phenolic compounds in the fruit, this could be a very good year.  Hopefully the late summer and fall will continue to stay warm and dry.  We are looking forward to our picking and wine making this fall.  Keep posted on our facebook and Twitter accounts at Casselvinyards of Hershey.
