Sensory Evaluations and Tasting
Every year at this time we pull samples from all our tanks to evaluate our new wines. Each wine gets evaluated by our staff and winemakers on smell, taste, appearance and sweetness level. We take great pride in our final product and despite the inherent enjoyment, the corrections often involve a good deal of work. Since we strive to keep everything natural, our wines need to be blended, aerated, aged or sweetened based on its individual characteristics. Up to this point, winemaking is a scientific endeveur, but from here on it requires some art and subjective taste. Fortunately, it seems we have been up to the task so far and our filtering and bottling crews also help us to improve our final product. We hope you will stop by in the upcoming year and let us know what you think. We are eagerly anticipating the launch of 2 new lines of wines including our new Reserve line and our new Sparkling line.
